Fundamentals of Human Nutrition (Honors)


Course Description

Builds a foundation in human nutrition. Bodily needs for nutrients and their digestion, metabolism, and basic functions will be covered. Exploration of the overall relationship between diet and health, including the impact of diet on obesity and chronic disease risk.

Course Objectives

Enable students from diverse backgrounds to understand basic principles of human nutrition. Following the completion of this course, the student will: • Identify the nutrients required for humans and understand how nutrient needs are met through food sources. • Have a basic understanding of nutrients required for humans; their chemical forms; digestion, metabolism, and utilization; and how recommendations are made to set dietary guidelines for the general population. • Understand the basic concepts of energy balance and metabolism and how they relate to obesity. • Explain the relationships between diet and risks for chronic disease, including cardiovascular disease, diabetes, and cancer. • Describe how to make informed decisions about foods and dietary supplements by evaluating sources of information and using sound scientific principles. • Understand the basics of analyzing the nutritional quality of diets through dietary analysis tools.
