Foodways, food habits, and food-related behavior of various population groups and their influences on the nutritional status of group members.
Additional Requirements for Graduate Students: Graduate students will prepare an annotated bibliography and a
5-page paper on an aspect of a selected population group. The
paper will also be presented to class members through either a
poster presentation or class seminar.

The student will become familiar with the foodways of selected populations within the United States.
The student will identify factors that influence food-related behavior within population groups.
The student will understand how foods and food-related behavior may be used to maintain cultural identity.
The student will understand the role of food habits in nutritional/health status of individuals and groups.
The student will become familiar with the techniques for studying food-related behaviors.
The student will become familiar with the sources of information on food-related behaviors.
The student will evaluate sources of information on food-related behaviors for reliability.
The student will understand the importance of foodways in nutrition counseling, community nutrition education efforts, and marketing of food products.
The student will apply an understanding of the factors affecting food-related behavior to identify influential factors on the food-related behavior of an individual and identify potential positive, neutral, and detrimental health consequences, through a written analysis.
