Governmental Regulation of Food Safety and Quality


Course Description

Role of mandatory and optional food laws and regulations exercised by state, federal and international agencies on food quality, safety, wholesomeness, and nutrition.

Additional Requirements for Graduate Students:
Graduate students will gather information on current food regulation activities not covered in lecture. They will summarize the information and dissimiate to the class. They will not receive additional credit for their efforts but instead will lose credit for work not completed in a satisfactory manner.

Student Learning Outcomes

  • Students will learn about the agencies and groups that are involved in insuring that our food supply is safe.
  • Students will develop an understanding of how laws and regulations are formed.
  • Students will discuss the different functions of federal agencies assigned various inspection and enforcement duties.
  • Students will explain major legal cases related to certain issues of food regulation activities, enforcement, and the case precedent that shapes its interpretation.
  • Students will develop an understanding of food quality, safety, wholesomeness, and nutrition regulatory framework.
