| Course Objectives: | As a result of the successful completion of this course, students should be able to:
1. Describe various conceptualizations of culture and their use in identifying problems and solutions related to health and nutrition.
2. Discuss forms, functions, and meanings of health, illness, and healthcare in a range of cultural contexts.
3. Recognize the influence of culture, ethnicity, race, heritage, family, religion, spirituality, group-based identity, and related factors on health behaviors and practices.
4. Identify sociocultural, interprofessional, clinical, and ethical aspects of health and nutrition communication.
5. Illustrate overlapping aspects of social relationships, cultural tendencies, and health theories and behaviors.
6. Discuss the topics of health literacy, health disparities, bias, social inequities, discrimination, and nutrition equity and identify associated implications for health and nutrition professionals.
7. Explain and employ principles and practices of cultural competence, cultural humility, and cultural intelligence in the provision of equitable, diverse, and inclusive health and nutrition communication, care, and services. | Topical Outline: | Introduction
